If you’re looking for a quick, easy to make and healthy breakfast, you’re in the right place. The 4-ingredient Mango Chia Pudding has it all. It’s low on calories, has no refined sugars in it and also, it’s DELICIOUS!

Also, fun fact of the day: Chia seeds are a super food and are extremely healthy and packed with nutrients. They’re loaded with antioxidants, high in quality protein and fibers and have loads of Omega-3.

Tips and tricks for the perfect Chia Pudding:

-I like to make my chia pudding the night before, because it allows it to get the right consistency. Just put the milk and chia seeds in a mason jar, give it a shake and place it in the fridge for 10 mins. Take it out, shake it really well again and leave it in the fridge until the next morning.

-I used coconut milk for my 4-ingredient Mango Chia Pudding, but it works really well with any type of milk, be it plant based or regular milk.

-The perfect ratio is 1:4, as in 1 part Chia seeds for 1 part milk. I use 4 tablespoons of chia seeds for 1 cup of milk and I find it perfectly balanced.

-1 tsp of sweetener is more than enough. If you don’t like maple syrup, use a bit of honey. Also, if the topping is sweet enough, you can skip this step.

Ingredients:

  • 4 tsp Chia Seeds
  • 1 cup Coconut Milk or any other milk
  • 1 tsp Maple Syrup
  • 1 Mango

Instructions

  • In a mason jar, place the milk, chia seeds and maple syrup. Shake it really well and place in the fridge for 10 minutes. Shake it again and leave in the fridge overnight or for at least 2 hrs.

  • Peel the mango and put it in the blender to blend until smooth.
  • When the chia pudding sets, place it in two jars or cups, layering it with the mango puree in between.
